Ingredienti:
• 2 uova
• una manciata di spinaci freschi
• una bella manciata di  grattugiato
• olio extravergine d’oliva, per la cottura

Procedimento:
	1.	Metti uova, spinaci e formaggio in un frullatore e frulla fino a ottenere un composto liscio.
	2.	Scalda un filo d’olio in una padella a fuoco medio-basso.
	3.	Versa piccole quantità di composto nella padella (io uso una padella per pancake per ottenere una forma perfetta).
	4.	Cuoci per 1–2 minuti, finché si formano delle bollicine e i bordi risultano compatti.
	5.	Gira e cuoci anche dall’altro lato fino a completa cottura.
	6.	Lascia intiepidire leggermente, poi taglia a striscioline e servi. Buon appetito! 😘

❄️ Si possono congelare fino a 3 mesi. Scongelare in frigo durante la notte o riscaldare delicatamente in padella.

MINI SPINACH OMELETTE 💚
Ingredients:
• 2 eggs
• a handful of fresh spinach
• a big handful of grated cheddar cheese or Parmesan
• extra virgin olive oil, for cooking

Method:
	1.	Add the eggs, spinach and cheese to a blender and pulse until smooth.
	2.	Heat a little olive oil in a pan over low–medium heat.
	3.	Pour small amounts of the mixture into the pan (I use a pancake pan to get that perfect shape).
	4.	Cook for 1–2 minutes, until bubbles form and the edges look set.
	5.	Flip and cook on the other side until fully cooked through.
	6.	Let them cool slightly, then cut into strips and serve. Buon appetito! 😘

❄️ These can be frozen for up to 3 months. Defrost overnight in the fridge or reheat gently in a pan.

EASY CARROT PIZZETTE!🥕
Ingredients for the pizza base:
	•	200g (1 1/4 US cup) carrots, peeled and cooked
	•	180g (1 1/2 US cup) self-raising flour (or plain/white spelt flour mixed with 2.5 teaspoons of baking powder)

For the topping
	•	Tomato passata
	•	Grated mozzarella or cheddar cheese

Method:
	1.	Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
	2.	Place the cooked carrots in a large bowl and mash them with a fork or potato masher.
	3.	Add the flour and mix everything together to form a dough, using your hands (add a little more flour if the dough is too sticky).
	4.	Roll out the dough until it’s 1/2 cm thick, then cut out circles for your pizza bases.
	5.	Knead the remaining dough back together and roll it out again until you have used all the dough to create the bases.
	6.	Transfer the bases onto your baking tray, spread with pizza sauce, top with cheese, sprinkle with dry oregano if desired, and bake for 12-15 minutes!

	•	100g flour (I use white spelt flour)
	•	1.5 teaspoons baking powder
	•	2 medium eggs
	•	Chocolate chips (optional)

Instructions:
	1.	In a large bowl, mash the bananas and cooked carrots until smooth.
	2.	Add the eggs, spelt flour, and baking powder, and mix until well combined.
	3.	If desired, sprinkle chocolate chips on top.
	4.	Divide the batter into muffin cups.
	5.	Bake in a preheated oven at 180°C (350°F) for about 15-18 minutes or until a toothpick inserted in the center comes out clean.
	6.	Let cool before serving. Buon appetito! 😋
