RAMADAN FROM AROUND THE WORLD 🌙

A warm welcome back to Ramadan from around the world! This is part 1 and today we’re taking a trip to Yemen to make some Mandi. A fragrant, rich and comforting one pot meat and rice dish. Full recipe below!

3 tbsp ghee
2 lamb shanks
2 green chilli
1 whole bulb of garlic 
4 dried limes
5 tbsp mandi masala (recipe below)
1 litre beef/chicken stock
1 cup golden sella basmati rice (soaked for one hour) 
1/2 tsp saffron strands
1/2 cup boiling water
Salt to taste
1 1/2 cups of the stock (to cook the rice)

Mandi masala
2 dried limes
2 tbsp black peppercorns
1 tsp fennel seeds
3 tbsp coriander seeds
1 tsp whole cloves
6 green cardamon pods
10 allspice berries

Start by heating up a large stew pot on a medium high heat. Add some ghee, then sear the lamb shanks on each side until well browned, then remove. Turn the heat to medium, then add the onion and chilli, cook for a few minutes. Now add the Mandi masala and bloom the spices for 30 seconds, follow up with the stock, limes, garlic and add the lamb shanks back to the pot. Cook for 1-2 hours until the lamb is soft.

In the meantime, bloom the saffron, by grinding it down in a pestle and mortar, then adding either ice or boiling water. Let sit for at least 30-40 minutes. Wash and soak the rice for 1 hour before cooking as well.

Remove the lamb and strain the stock. Now measure out 1 1/2 cups of the stock in a separate pan, add the saffron water and enough salt to taste, cover and simmer for 10 minutes on a low heat. Now remove the lid, add the rice and cover and cook on the lowest heat for 15 minutes. Then remove from heat and let steam for a further 20 minutes. Fluff up with a fork, then serve and enjoy!
