Our family likes to get stuck in to all of the Christmas traditions, and today Denzel is helping make the Christmas Cake!

Here is the recipe if you’d like to make it yourself:

Ingredients
450g currants
175g sultanas
175g raisins
50g glacé cherries, rinsed, dried, finely chopped
50g whole candied orange peel, finely chopped
3 tbsp brandy or whisky
1 cup of orange juice
225g plain flour
½ tsp salt
¼ tsp nutmeg, freshly grated
½ tsp mixed spice
225g unsalted butter
225g soft brown sugar
4 eggs
50g almonds, chopped, skin on is fine
1 dessertspoon black treacle
Zest of 1 lemon
Zest of 1 orange

Decoration 
almonds, pecans, Brazil nuts, glacé cherries for topping, (optional)
A tablespoon of marmalade 
A tablespoon of whisky or brandy

Method
The night before baking, mix all dried fruit, peel and cherries with the orange juice, treacle and brandy or whisky. Cover and leave overnight so the fruit absorbs everything.

Preheat oven to 140°C fan or gas mark 1.
Grease and line a 20cm round or 18cm square tin with double parchment. Wrap brown paper around the outside for protection.

Sift flour, salt and spices together. In a separate bowl, cream butter and sugar until light. Beat eggs separately, then add gradually. Fold in flour, fruit, nuts and citrus zest gently.

Spoon into the tin and level the top.
Cover the top with parchment with a small hole in the centre.

Bake on the lowest shelf for 4½ to 4¾ hours, until springy in the centre.

Cool in the tin for 30 minutes, then cool completely on a rack.

Feeding
Wrap and feed occasionally in the weeks before Christmas with a small amount of whisky or brandy.

Decorating
decorate with your choice of nuts and cherries, or you can ice with marzipan.
