This way of eating includes plenty of colourful fruit and veg, whole grains, legumes, nuts and seeds, olive oil and oily fish, while being lower in red and processed meat and ultra-processed foods 🥑

And of course, it’s not just for people with endometriosis. this is a pattern of eating that can benefit most people’s overall health 🤝

almond croissant baked oats 🥐 

on a mission to make breakfast feel fun again ⭐️ I literally jumped out of bed this morning!! I like mine served with Greek yogurt and a drizzle of almond butter to make it a balanced and satisfying breakfast. 

Ingredients ⬇️ 
Base
220g rolled oats
160g apple sauce (or 2 ripe bananas, mashed)
60g protein powder (or substitute with oat flour)
400–425ml milk of choice
1½ tsp baking powder
1 tsp almond extract

Topping
2 tbsp ground almonds
1 tbsp maple syrup or honey
50g almond butter
40g flaked almonds
Icing sugar, to sprinkle (optional)

Method 🥣 

Preheat the oven to 180°C fan. In a greased baking dish combine all the base ingredients and mix well.

In a small bowl, mix together the ground almonds, maple syrup (or honey) and almond butter, then spoon this over the top and spread. Finish by sprinkling over the flaked almonds.

Bake for 35–40 minutes, until set and lightly golden. Allow to cool for at least 15 minutes, then sprinkle with icing sugar if using. For clean slices, leave to cool completely (around 2 hours) before cutting.

Keeps well in the fridge for 3–4 days!!
