#ad | High brow, low brow wine pairings? Yes. Because the price tag never mattered in the first place and I can prove it.
One of the most common “mistakes” I see people make with wine is waiting for the “right” moment or dish to pair with the “good stuff.” As if the wine needs to earn its place at the table based on what’s on the plate next to it.

I know when you saw that 2016 Bordeaux being decanted you were probably expecting something a bit more… well… fancy. And no shade to beef tacos, but they don’t quite have the same cache as a Beef Wellington (though I think we can make a case for that at a later date). The point is, the only things that actually matter are:

1. The fundamental principles of food and wine pairing
2. You want to drink the wine

It really is that simple. Unlike in life, where you dress to the occasion, with food and wine — and especially with beef — contrast works in your favor. The price of your ingredients and the prestige of your bottle don’t need to be in conversation with each other. The pairing principles apply either way, and honestly? Some of the most satisfying pairings I’ve ever had looked ridiculous on paper.

Beef in any form is a natural match for Cabernet because the tannins bind with the protein in the meat — it’s one of those pairings that just works on a structural level. But where a Bordeaux pairing really gets interesting, especially with something as layered and nuanced as a taco, is in the blend itself. Left bank Bordeaux is anchored in Cab Sauv, but you’ll also find Merlot, Cab Franc, Malbec, Petit Verdot — and those grapes are doing exactly what your spices do for the beef. Adding depth. Herbaceous here, fruity there, a little savory running through all of it — ebbing and flowing with every bite in a way that keeps the pairing interesting from the first taco to the last.

And since it all fits in a handheld shell, you can always keep one hand free for refills.

Riddling and Disgorging of Champagne are 2 things you dont get to see in action very often. And what made this even more interesting is that these bottles are aged under cork, not under screw top. If you’re confused by what that means, allow me to explain.

When champagne is made, it starts off as a still (usually white) wine. The wine is bottled, and then sent through fermentation a second time whilst in bottle. Yeast and sugar are added to make that chemical reaction possible and the outcome is a tiny bit more alc0h0l and a LOT of carbon dioxide. The CO2 is trapped inside the bottle,
as are the yeast cells that eventually “pass away” and live like a sandy ocean floor. And these are all good things. We want those lees to stay in contact with the Champagne bc that’s what gives Champagne its signature brioche, croissant, toasty flavor. So winemakers will age it, on the lees anywhere from 18months to 18+ years. Now, normally that aging would be done under a crown cap (think metal cap of a beer or old school soda) until it’s ready to be disgorged and corked. But some producers make the much more expensive decision to 
do that aging under a cork which, unlike metal, is somewhat porous. It’s an expensive, labor intensive choice, and because removing it is so tricky, disgorging cant be done using a machine like with a crown cap, it has to be done by hand. And that’s what you’re seeing in this video!
