INGREDIENTS 
3 rice paper sheets (1 per bagel)
5 eggs
1 tbsp oil
¼ tsp salt
3 oz cheddar or mozzarella cheese either diced or grated
“everything bagel” seasoning or sesame seeds

INSTRUCTIONS 
1. In a medium hot skillet, add oil and scramble 3 eggs just until creamy, mixing constantly. Add salt.
2. Separately, crack 2 eggs onto a large plate and mix well.  
3. Dip a rice paper sheet into the egg mixture, allowing about 1 minute per side until the rice paper is pliable. Don’t oversoak or the rice paper will tear. 
4. Lay flat on a chopping board, place 1/3 of the scrambled eggs at one end of the sheet, add cheese over the eggs, carefully fold one end over the egg mixture and roll up tightly.
5. Bring the ends together and tuck one into the other to seal.
6.  Sprinkle with everything bagel seasoning or sesame seeds.
7.   In an airfryer at 400 F, bake for about 6 minutes or until rice paper is browned and crisp. Enjoy!

1. Slice 2 or 3 large field or heirloom tomatoes into ½” thickness. Drizzle with some olive oil.�2. Add the base and toppings of your choice. Drizzle with a little more olive oil, salt and pepper. Enjoy!

INGREDIENTS 
2 tbsp cocoa powder
3 tbsp cornstarch
1 cup semi sweet chocolate chips
3 tbsp olive oil
4 tbsp tahini paste (or peanut butter or almond butter)
2 large eggs
1/3 cup white sugar
¼ cup packed brown sugar
1/8th tsp salt

Tahini Swirl
Remaining 3 tbsp tahini
1 tbsp honey 

DIRECTIONS 
1. In a small bowl add cocoa and cornstarch and blend.
2. Add oil and just 1 tbsp tahini to chocolate chips and microwave for 1 minute on medium heat just until mixed until smooth.
3. In a larger bowl add eggs, both sugars and salt and beat for about 3 minutes until
thicker and doubled in volume.
4. Add melted chocolate mixture and beat for a minute. Pour into an 8” x 8” pan sprayed with oil.�5. Mix remaining 3 tbsp tahini and honey together and drop onto brownie batter and
swirl through with a knife to marble. Bake at 350 F for about 20 minutes or just until centre is almost dry. 
6. Cool and *optional dust with icing sugar before serving. Enjoy!
