PLANTAIN TORTILLAS

Makes: approx. 10 tortillas

Ingredients:
4 green plantains
1 tbsp sea salt

Instructions:

Boil the Plantains:
Score plantain skin and cut into chunks. Place them in a large pot of water. Boil for 15-20 minutes until they are tender.

Cool the Plantains:
Drain the plantains and set them aside to cool for a few minutes until they are easy to handle.

Prepare the Dough:
Remove the skins from the plantains. Transfer to a food processor. Add the 1 tablespoon of sea salt. Pulse the mixture until a sticky dough consistency forms.

Form the Tortillas:
Scoop out small portions of the dough (about the size of a golf ball) and roll them into balls. Place each ball between two sheets of greaseproof paper (parchment paper). Use a tortilla press or the back of a plate to flatten them into thin rounds.

Cook the Tortillas:
Heat a lightly greased pan over medium heat. Place each tortilla in the pan and cook for 2-3 minutes on each side until golden.

Serve:
Remove from the pan and serve warm. These tortillas can be used as a base for tacos or wraps. 
I made tacos and added lettuce, avocado, tomato salsa, fried plantain, mushroom and walnut mince + topped with a cashew & peppercorn sauce.
