Sorry I’ve been MIA recently. It’s been a busy few weeks as we are moving to a new house! I’ll be back soon, but in the meantime, here’s a steak and eggs burrito recipe that has me drooling just thinking about it. 

It uses my chimichurri steak recipe from a few posts ago!

Dress to impress this weekend for date night! Oh I’m not talking about your outfit, I’m talking about your steak! Here’s an easy chimichurri sauce and steak recipe that your date will love. 

Ingredients
1.5 cups parsley
4 cloves garlic
2 tbsp oregano
1/3 cup red wine vinegar
1/2 cup olive oil 
1 tbsp lemon zest
Salt and pepper to taste 

Blend all the sauce ingredients in a food processor until smooth. Store in the fridge for about 30 mins before using. 

Marinate your flank steak in half of the chimichurri sauce for about 1 hour if not more. Scrape off the sauce and coat your steak with salt. 

Preheat a pan on high for about 5 minutes and then add 1 tbsp oil. Sear steak on both sides for about 3 mins (depends on thickness) for medium rare. Let it rest for 5 minutes or so and serve! I served it with asparagus and potato wedges.
