Peking Beef Rice Bowls 🍚 BALANCED BOWLS AROUND THE WORLD 🌏 
Inspired by Peking flavours from China 🇨🇳 

Sweet and sticky Peking style beef bowls that are quick and easy to make & meal prep friendly! It’s got 46g of protein per bowl, is healthy, high protein but still packed with flavour! Serve it with sticky rice & edamame for a tasty meal prep lunch or dinner!

Macros per portion: 540 cals, 46g P, 55g C, 13g F

🔸 Peking Beef Ingredients (serves 3):
500g 5% lean beef mince
1tsp Chinese 5 spice
0.25tsp white pepper
2tbsp light soy sauce
1tbsp dark soy sauce
1tbsp rice wine vinegar
2.5tbsp hoisin sauce
1tsp honey
2.5tsp minced garlic
1tsp minced ginger 

🔸 Rice Bowl Ingredients (serves 3):
390g cooked sticky rice 
180g edamame 
1.5tsp mixed sesame seeds

1. In a small jug, mix the light & dark soy sauce, rice vinegar, hoisin, honey, minced garlic & ginger into a smooth sauce & set aside
2. Heat a wok on high heat, spray with a little oil & once smoking, add the beef mince
3. Let the mince sit in the pan for a minute before breaking apart, to help brown & crisp
4. Once the mince is almost browned, add the Chinese 5 spice & white pepper & cook till browned all over
5. Pour the Peking sauce over the beef & mix through, lowering the heat to medium high and simmer for a few mins till cooked & reduced
6. Lay out 3 meal prep bowls, add the cooked sticky rice at the bottom, followed by the Peking style beef & edamame and garnish with sesame seeds
7. Let it fully cool before covering with an airtight lid & storing in the fridge for 3-4 days. When ready to eat, reheat in the microwave till hot throughout & enjoy!

It’s an easy way to get a high protein pancake fix & actually tastes just like cake! 40g of protein per pancake bowl with the strawberry, white chocolate & biscoff toppings! You can easily meal prep these & reheat in the microwave too!

Macros per bowl: 425 cals - 40g P, 41g C, 10g F (with toppings) 
356 cals, 40g P, 34g C, 6g F (without toppings)

🔸 Protein Pancake Bowl Ingredients (serves 1):
1 large egg
50g 0% fat greek yogurt 
60ml semi skimmed milk
35g all purpose flour
25g vanilla whey isolate protein powder 
1tsp baking powder
Sweetener of choice

🔸 Topping Ingredients:
35g chopped strawberries 
5g white chocolate chips
1tsp biscoff (melted)

1. Preheat the oven to 180C
2. Add the wet ingredients to an oven safe bowl & whisk till smooth
3. Fold in the dry ingredients till just combined
4. Add any toppings you want or keep it plain, I mixed in two thirds of the strawberries to the protein pancake mix, the topped with the rest & the white chocolate chips
5. Oven bake for approx. 30 mins (time may vary depending on your dish size, I used a 0.6l glass bowl) so adjust time as needed. TIP: you know it’s cooked when a toothpick or knife comes out mostly clean
6. Once cooked, let it cool for at least 5 minutes, then drizzle with the melted biscoff (if using) or with toppings of your choice! 

Meal Prep Tip: you can make multiple bowls at once with different toppings & store in the fridge once cooled for up to 3-4 days! Reheat in the microwave when ready to eat!

One Pan Raspberry & White Chocolate Cake 💕 If you have a sweet tooth, then this recipe is for you! It’s an easy, one pan dessert that’s quick but still impressive and minimal washing up! White chocolate & raspberry is one of my favourite dessert combinations so give it a try & enjoy!

🔸 Ingredients (serves 2):
75g unsalted butter
55g light brown sugar
20g granulated sugar
1 large egg
1tsp vanilla extract
120g all purpose flour
1tsp baking powder
pinch of salt
30g white chocolate chips (plus 5g for topping)
6 fresh (or frozen) raspberries
(Optional: honey drizzle & vanilla ice cream to serve)

1. Preheat oven to 160C
2. In a 20cm oven safe pan, brown the butter (do this by heating over medium-low heat, stirring often till its foamy, turns brown & has a nutty aroma (you should see brown flecks at the bottom of the pan once done)
3. Once done, turn off the heat off, and cool for a few mins before mixing in the light brown & granulated sugars till smooth
4. Mix in the egg, vanilla extract till combined
5. Begin folding in the plain flour, baking soda and salt. Once almost combined, fold in the chocolate chips till just combined, then very carefully fold in the raspberries
6. Spread the dough in the pan, then oven bake for 15-20mins till golden
7. Cool for a couple of minutes, then top with a large scoop of vanilla ice cream, lightly drizzle with honey and dig in straight from the pan!
