This… is Sizzlin’ Shenanigans! A tour with myself and @The Smokin' Elk BBQ School 

A group of like-minded food lovers headed to Austin, Texas for pitmaster masterclasses, iconic BBQ joints, cold beers, live music, and a lot of laughs along the way. From meeting some of the best pitmasters in the world to sharing incredible food around the table, this tour is about more than BBQ. It is about the people, the stories, and the memories you take home with you.

When we set out to create this trip, the goal was simple.

One of the standout moments from our very first Sizzlin’ Shenanigans tour to Austin was hosting an incredible steak masterclass with @Jess Pryles 

Jess is one of the leading voices in live-fire cooking today. Originally from Melbourne, Australia and now based in Austin, she has spent more than a decade immersing herself in the world of meat, learning from ranchers, butchers and pitmasters while studying the science behind beef and barbecue. She even completed a graduate program in Meat Science at Iowa State University and regularly teaches workshops and speaks at major BBQ events around the world. 

She’s also the creator behind the globally recognised @hardcorecarnivore range of rubs and the author of the cookbook of the same name, building a brand that has become a go-to for serious steak and barbecue fans. 

During the masterclass Jess took our group deep into the world of steak, covering different cuts across a range of price points, the differences between grass-fed and grain-fed beef, and the fundamentals of butchery and cooking techniques to get the most out of every cut.

She had everyone completely captivated. The knowledge, the stories, the practical tips… and of course some phenomenal steak along the way.

Great food, plenty of laughs and a room full of people completely obsessed with steak. It was the perfect way to bring our first Austin tour to a close.
