MY CHOPPED SEASONING BASE 
And how I add more flavour without using powdered seasonings.

When I threw the all purpose seasoning away a few years back I honestly didn’t know how or what to do to replace it but just thought about what all purpose would look like if it was fresh ingredients 

GREEN SEASONING & MY CHOPPED SEASONING BASE were my new all purpose and I’ve been using these in near enough all of my cooking every since 

THE BASIC RECIPE IS 
1-2 scallions 
5-8 cloves of garlic
1 scotch bonnet 
1/2 white onion 
1tbsp or so of fresh thyme 

WHEN USING MY CHOPPED SEASONING FOR A CURRY ILL ADD
A thumb piece of ginger 

METHOD 
Chop all of the ingredients as fine as possible and use.

Now I make this fresh every time but to save time you could freeze into ice cube trays or place in a glass jar which will keep in the fridge for a few days. Top with oil and it will last in the fridge longer.

Everyone has their own way of cooking and my cupboard was full to the brim with high sodium processed powdered seasonings for a good 30 odd years but on my journey to be healthier and use more fresh ingredients I have slowly dropped them out and everyone that eats my food will tell you it bangs! I can say this with confidence. So you can swap and still have amazing tasty food 💛

Curried Lamb Recipe 

Ingredients 
- 400g diced lamb
- 1tbsp green seasoning 
- My chopped seasoning base - 5 garlic cloves, small piece of ginger, 1 scotch bonnet, 1 scallion 1/2 small onion and a few sprigs of thyme 
-  2-3tbsp  curry powder 
- salt and black pepper to taste 
- 1tbsp ground pimento 
For cooking
- 1tbsp coconut oil 
- 1-2tsp curry powder
- 1 carrot, chopped
- 2-3 potatoes, diced 
- 200-300ml water or stock 

Method 
1. Season the lamb and place in the fridge overnight or for at least 4 hours.
2. Add the oil to a pan, followed by the curry powder, cook for a minute and once bubbling add the lamb.
3. Brown off then cover and cook on a medium heat for 5-8 minutes. Once the lamb starts to release its natural juices add the water, potato and carrot.
4. Cook on low for 2 hours. After this time remove half of the potatoes mash and add back to the pan. This will thicken your gravy.
5. Cool with the lid off for 5 minutes and serve with plain rice or roti (how we love it)
