Unpopular opinion: I don’t recommend fasting for menopausal women who want to lose fat ❌

Most of my clients have spent decades following diet rules, and fasting just feels like another rule to follow. 

Instead, I teach women to tune into their hunger, understand what’s driving it, and make choices that actually fill them up.

My Harissa Chicken Lasagne recipe – the perfect comfort food for any fat loss during the menopause transition

Serves 6

Ingredients
5 chicken legs, skin removed
1 large red onion
2 bell peppers, any colour
2 large carrots
100g sweetcorn
2 handfuls spinach
2 garlic cloves
1tbsp olive oil
1tbsp tomato puree
3tsp harissa paste
400g tin chopped tomatoes
250ml chicken stock (made with 1 low sodium chicken stock cube)
6 wholewheat lasagna sheets
400g low fat cottage cheese
50g grated reduced fat cheese (50% fat)
1tsp smoked paprika
1tsp dried oregano
Handful fresh parsley, finely chopped
 

Recipe
1.Roast the chicken legs in a pre-heated oven at 180 degrees fan, for about 30 minutes until cooked through. Let cool slightly and shred the meat and set aside.

2.In a food processor, blitz together the red onion, peppers, carrots and garlic.

3.In a large saucepan, heat the olive oil. Add the blitzed veg and sauté for 5 minutes.

4.Stir in the harissa paste, tomato puree, smoked paprika and oregano into the pan. Cook for 1 min.

5.Add the chopped tomatoes, chicken stock, sweetcorn and spinach. Simmer for 5-10 mins.

6.Add the shredded chicken, and let simmer for another 5 minutes. Taste and season with salt and pepper as needed.

7. Make the creamy layer by mixing together cottage cheese with the chopped parsley, and season to taste with salt and pepper. Optional: Add 1-2tbsp milk to loosen the mixture to spread more easily.

8. Assemble the lasagne in a rectangular baking dish. Add a layer of the chicken mix, followed by lasagna sheets, followed by the cottage cheese mix. Repeat until everything is used up, with the top layer being the cottage cheese mix.

9.Sprinkle grated cheese over the top, cover with foil and bake in the oven for 20 mins.

10.Remove the foil, and bake for another 10 mins until golden and bubbling.

11.Remove from oven, let cool for a few mins and serve with a side salad
