Beef Cutlets with Beetroot 🫜

Ingredients:
- 750 g ground beef
- 330 g boiled or roasted beetroot grated
- 300 g boiled potato grated
- 2 egg
- 300 g onion
- 200 g pickled cucumber grated
- a ping of nutmeg
- 2 tsp paprika
- Salt and pepper, to taste
- Oil for frying

1. Mix all ingredeints in a bowl and form medium size meatballs, then slightly flatten them.
2. Fry in neutral oil on medium heat for 4 mins on one side, the flip and fry about 4 more mins until golden crust develops. Flip again and cover with a lid to cook firther 10-12 mins until fully cooked. 

*if you don’t like a strong taste of onion you can sautee it for a little bit beforehand.

this recipe makes about 30 cutlets, you can split the recipe in half for a smaller batch.

Delicious immunity boosting tea (writing this as I’m fighting a cold and drinking litres of it 😋)

- sea buckthorn berries 2 tbsp
- 3-4 tangerine segments or orange slices 
- a couple of lemon slices 
- 1 tsp of ivan chai or any black tea (you can skip it too)
- 1/3 tsp cinnamon or cinnamon stick 
- 1 tbsp of honey 

Muddle berries and tangerines together, add the rest of the ingredients and pour over with hot, but not boiling water, about 80-90 degrees. Let it steep for 5 mins at least and enjoy!

Ukranian Borscht 
Ingredients (makes a large pot 6-8 portions)

Broth:
- 1.5–2L water
- 400–500g beef on the bone

Saute Veggies:
- 2 small beetroots
- 1 carrot
- 3 onions
- 4–5 tbsp oil
- Splash vinegar or half a lemon (juice)
- 2 tbsp tomato paste

Other:
- 300g cabbage
- 4 potatoes
- Salt
- 1–2 bay leaves
- Fresh herbs
- 1 garlic clove (optional)
- Pinch clove/black pepper (optional)

1. Broth: Simmer meat in 1.5–2L water for 1–1.5 hrs, skimming foam.
 2.Saute Veggies: Fry chopped onion + grated carrot in oil 5 min. Add grated beet + vinegar/lemon, cook 5 min. Add tomato paste, cook 5–7 min.
3. Assemble: Remove meat, add shredded cabbage to broth, cook 5–10 min. Add diced potatoes, cook until tender.
4. Chop meat, return to pot, salt to taste.
5. Add the saute veggies, bay leaf, herbs + optional garlic/spices/herbs. Simmer 5–7 min, then rest 5–10 min under a lid.

Serve with bread, soured cream and extra fresh herbs.

Steak & Polenta 
🍽️ Serves 1

✨ Ingredients:
For the marinated steak
- 1 small steak (your choice of cut)
- 1 tsp olive oil
- 1 clove garlic, minced
- ¼ tsp dried oregano
- Salt & pepper
- Optional: squeeze of lemon juice or splash of balsamic for tenderness
For the vegetables
- 8–10 cherry tomatoes
- A handful of asparagus, trimmed
- 1 tsp olive oil
- ½ tbsp balsamic vinegar
- ½ tsp dried herbs (like oregano or Italian mix)
- 1 garlic clove, gently crushed
- Salt & pepper
For the polenta
- 75g dry polenta
- 250ml chicken stock
- 1 tbsp mature cheddar, grated
- Optional: 1 tsp butter or olive oil for creaminess
- Salt & pepper to taste

Instructions:
1. Rub the steak with olive oil, garlic, oregano, salt, and pepper. If you like, add a small splash of lemon juice or balsamic vinegar. Let it marinate while you prep everything else (at least 15 mins at room temp).
2. Toss cherry tomatoes and asparagus with olive oil, balsamic vinegar, dried herbs, salt, pepper, and the crushed garlic. Spread on a baking tray and roast in a 200°C oven for about 15 minutes, or until the tomatoes blister and asparagus is tender.
3. Bring chicken stock to a boil in a saucepan. Slowly whisk in polenta and reduce heat to low. Cook for 5–7 minutes, stirring until creamy. Stir in cheddar and a bit of butter or olive oil if using. Season with salt and pepper.
4. Heat a grill pan or skillet until hot. Sear steak for 2–3 minutes per side (medium-rare) or cook to your preference. Let it rest for 5 minutes before slicing.
5. Spoon the creamy polenta onto a plate. Top with sliced steak, roasted tomatoes, and asparagus. Drizzle with any roasting juices and enjoy!
