steak & peppercorn tacos 🥩🌮

Recipe serves 2 (makes 4x tacos):

Fry the finely chopped mushrooms until crispy then add in your garlic and fry for a few more minutes before popping them to one side. Start par boiling your broccoli in a separate pan on high heat - for around 10 mins. 

In the same pan as the mushrooms, add a little more butter before frying the steaks for 2 mins on each side with the garlic, on a high heat and then another 2 mins on a low heat. Pop them to one side to rest before adding the mushrooms back into the pan to absorb the flavours. 

Assemble the wraps starting with the cheese (around 12g per taco), the steak, broccoli, mushrooms and place into the air fryer for 2 mins on 200 to melt the cheese. 

Serve with a drizzle of peppercorn sauce and serve! I served ours with some corn on the cob 🌽 

Ingredients:
-4x mini wraps @aldi
-40ml peppercorn sauce (1x tbsp powder with 40ml hot water) 
-6x broccoli stalks 
-6x chestnut mushrooms 
-1x tsp light butter (for the mushrooms)
-1x garlic clove (finely chopped) 
-50g mozzarella 

For the steak: 
-2x medium rump steaks @aldi
-1x tsp light butter
-1x garlic clove (roughly chopped)
-1x tsp cumin
-1x tsp smoked paprika
-1x tsp mixed herbs

Recipe serves 2:

Make your easy stuffing by using a pack mix of sage and onion stuffing, (I used around a quarter of the pack) and added water - mix thoroughly ensuring there are no dry bits of the stuffing then pop into the oven for around 15 mins on 180. 

Cook your sausages in the air fryer whilst the stuffing is cooking, I did mine on 180 for 12 minutes, turning them half way to make sure they brown all the way round but don’t burn. You can cook in the oven at the same time as the stuffing though, however will need longer in the oven (I just prefer mine in air fryer). 

Once the sausages are cooked, pop your chopped Brie on top then back into the air fryer for 1-2 mins to melt the cheese. After it’s melted, add the rest of your ingredients - break up the stuffing and crumble on top, then add your cranberry sauce, caramelised red onion chutney and a drizzle of bisto gravy on top! Finish with some cracked black pepper & then I served it with some chips! Total cals = 700 cals but so worth it 🤤

-2x large pork and apple sausages @aldiuk 
-2x brioche hot dog buns @aldiuk 
-1x tbsp cranberry sauce (split between two)
-1x tbsp caramelised red onion chutney (split between two)
-40g Brie
-1/4 pack paxo stuffing
-100ml hot water for stuffing
-1.5/2x tbsp @bisto_uk reduced salt gravy granules (depending on the thickness you prefer)
-100ml hot water for gravy
