LEEK + BUTTER BEAN SOUP 🍲

I honestly believe that leeks are THE most underrated vegetable of all time, and I have no idea why - they’re *so* good

They give this protein + fibre rich leek and butter bean soup so much flavour, and they’re also an underrated nutrient powerhouse too, with decent amounts of lutein and zeaxanthin (two compounds great for eye health), allicin for cardiovascular protection, and Vitamin K.

But beyond that, they bring such an underrated level of flavour and texture to soups, and you’ll find all of that in this one.

Give it a try 🌱

Ingredients (serves 2-3):

- 2 whole leeks, chopped
- 1 large carrot, peeled and diced
- Pinch of salt
- 1 tbsp olive oil
- 1 tsp black pepper, sage and thyme
- 480g cooked butter beans (2 cans, drained and rinsed)
- 750ml veg stock
- 1/3 cup nutritional yeast
- Chilli flakes (to garnish)

Method:

- Add your chopped leeks and carrots into a large saucepan with some olive oil and a pinch of salt, and cook down for 5-7 minutes until soft
- Add your spices followed by your butter beans, and stir
- Pour in your vegetable stock and mix through
- Take a ladle and remove about 1/4 of the soup, add into a mixing jug and blend with a stick blender (or add into a regular blender)
- Pour back into the soup and stir through
- Cover, lower to medium heat and simmer for 10 minutes. Once done, add in your nutritional yeast
- Serve in your favourite soup bowl, garnish with chilli flakes, serve with some sourdough and enjoy

What’s great about this is soup is that it’ll taste even better the next day! 🌱

What I Eat In A Day - 8 1/2 years plant-based, high-protein and high-fibre 🌱

Still crazy to me that it’s been nearly 9 years since consuming any animal products.

I continue to enjoy making certain meals and making sure that I’m fundamentally fuelling myself properly for workouts, but just for every day life as well.

We’ve got around 150g protein and 55g fibre, as well as various micronutrients to support good health.
