Dumb Dinners, Episode 33: Hot Honey Feta Pasta Salad

What you need:
1 lb short pasta (cavatappi or fusilli)
12 oz crumbled feta
5 tbsp olive oil
3 tbsp hot honey, for the sauce
2 tbsp hot honey, for drizzling on top
1 medium lemon
2½ cups shredded rotisserie chicken
1 pint cherry or grape tomatoes
½ cup shelled pistachios
½ tsp garlic powder
½ tsp dried oregano
1 tsp black pepper
½ cup fresh basil or mint

How to make it:
Bring a big pot of heavily salted water to a boil. Add the pasta and cook 1 minute longer than the box says.
While the pasta boils, dump the whole tub of feta into a big mixing bowl. Add the olive oil, 3 tbsp hot honey, garlic powder, oregano, and black pepper.
Grate the yellow skin of the lemon over the bowl, then squeeze in all the juice.
Mash with a fork for about 30 seconds until the feta breaks down and mixes with the oil. It’ll look chunky, not smooth, and that’s exactly right.
Before draining the pasta, scoop out 1 cup of the cloudy pasta water and set it aside. Then drain the pasta in a colander.
Dump the hot pasta into the bowl with 2 tbsp of pasta water and toss hard for about a minute. Add more water 2 tbsp at a time until the sauce is glossy and creamy.
Stir in the shredded chicken while everything is still warm so it soaks up the sauce. Taste, and add a pinch of salt or more lemon if flat.
Run the cherry tomatoes through the grape cutter to quarter them, then stir them in.
Spoon the salad into your serving bowl.
Drizzle the last 2 tbsp hot honey over the top in a pretty ribbon.
Scatter the pistachios, tear the basil or mint over everything, and finish with more black pepper.

what you’ll need: for the bubble solution
4 gallons distilled water
4 cups blue Dawn (basically a full big bottle, regular original, not ultra)
1/4 cup guar gum
2 teaspoons baking powder
1/4 cup glycerin (optional but really helps)
a kiddie pool to hold the solution

for the wand

1 pool noodle
clear packing tape (this is what I used and it held up great)
a knife or scissors

how to make the bubble solution:
in a small bowl, stir the guar gum and the glycerin together into a smooth paste, this keeps the guar gum from clumping when it hits the water
pour the paste into the distilled water and whisk until fully dissolved
gently stir in the Dawn and the baking soda, try not to froth it
let it rest for a few hours or overnight, this is the step everyone skips and it makes a massive difference
pour into the kiddie pool, you only need a couple inches of depth to dip the wand

how to make the pool noodle wand:

cut a small piece off one end of the pool noodle, about 6 inches or so, that little piece is going to be the handle
take the long piece and bend it into a loop, then attach each end of the long piece to the small handle piece using the packing tape, you end up with an oval with the handle along the bottom
dip the whole oval flat into the solution, lift it up slowly, and walk with it

if your kiddo is on the younger side, the giant wand can be a lot for them, so just hand them a regular bubble wand and let them go to town, the solution is the real magic
