Save this quinoa salad recipe 🥗👇🏻

This is my spin on the famous Jennifer Aniston salad, with one addition that completely elevated the entire dish - @caprunescan 🫶🏻 They add the perfect touch of natural sweetness and really tie the whole dish together. Prunes are so underrated!! They are simple, packed with flavour and texture, and support both gut and bone health. California Prunes make for an amazing snack, but I also love adding them to my favourite recipes!

This one is going on permanent rotation. It stores well in the fridge (can easily be meal prepped!), works for lunch or dinner, and is the perfect dish to bring to a summer barbecue. It is gluten-free and pairs beautifully with chicken, fish, or red meat.

Recipe:
3 cups cooked quinoa 
1 cucumber, chopped
1 can of chickpeas, rinsed & drained
1 cup California prunes, diced
1 cup parsley, finely chopped
1 cup mint, finely chopped
½ cup red onion, finely chopped
½ cup feta, crumbled
2 tbsp pistachios, chopped
¼ cup extra virgin olive oil
Juice of 1 large lemon, or 1.5 smaller lemons
Salt & pepper
