I recently got to try a few products from @unexpectedmeal.la and honestly ended up being really surprised by how good they were 😭 We’re always craving authentic Korean seafood dishes at home, so I loved that I could easily make these kinds of meals here in the US too.

Especially the Jjukkumi Bokkeum (spicy stir-fried baby octopus). I paired it with pork belly and udon noodles and it was SO spicy, savory, and satisfying. My husband loves spicy food and jjukkumi/samgyeopsal combos, so he absolutely devoured this one 🤭

I was also really impressed by the Yeonpotang (Korean octopus soup). The octopus was surprisingly fresh and chewy, and the kit already comes with the broth, vegetables, octopus, and clams, so it was really easy to put together. I just added extra green onion and chili on top.

🌶️ Jjukkumi Bokkeum (Spicy Stir-Fried Baby Octopus)

• Season sliced pork belly lightly with salt & pepper
• Cook pork belly until almost fully cooked
• Add 2 packs Unexpected Meal LA Jjukkumi Bokkeum
• Sauté briefly so the octopus stays tender and chewy
• Garnish with minari (Korean water parsley) and sesame seeds

Viral Korean tuna bibim udon 🍜🤍

This super simple tuna bibim udon got really popular in Korea after a celebrity introduced it, and honestly I had to try it because I randomly had udon noodles at home (and of course I always have canned tuna stocked 😭).

I feel like this kind of thing happens all the time in Korea honestly 😂 A celebrity casually shares a simple food combo on YouTube or TV and suddenly everyone starts making it at home. Korean people are seriously SUCH foodies lol.

And honestly… I get the hype now 😭 It takes like 5 minutes to make but has all the flavors people love. Chewy udon noodles, creamy tuna mayo, savory umami from the tsuyu, nutty sesame seeds, and fresh green onion all work so well together.

I also love how simple, affordable, and satisfying it is with barely any ingredients. Definitely recommend this one if you’re feeling a little lazy but still want a really flavorful bowl of noodles 🤍

🍜 Tuna Bibim Udon

1 serving

- Ingredients
1 pack udon noodles
1 small can tuna (5.29 oz / 150g), drained
2-3 Tbsp mayo (I used Kewpie)
1.5 Tbsp tsuyu
(or mix 1 tsp sugar + 2 tsp mirin + 2 tsp soy sauce as a simple substitute — this is my recommendation if you don’t have tsuyu)
Crushed sesame seeds
Gim (seaweed)
Green onion

Instructions

1.Cook noodles
Cook udon noodles according to package instructions. (I microwaved mine, but you can also boil them or soak them in hot water.)

2.Mix
Add drained tuna, mayo, tsuyu, sesame seeds, gim, and green onion. Mix everything well.

3.Serve
Enjoy immediately 🤍

Korean corn dogs… but with chewy potato dough 🌭🤍

I’ve been wanting to try the viral gil gamja (chewy potato) trend from Korea lately, but decided to make these cute mini corn dog versions instead 😭 I loved the idea of piping the potato dough around the sausage to create a fun shape, and honestly the chewy + crispy combo is SO good.

I also really liked that this version doesn’t need any flour batter. The potato dough gets super crispy outside while staying soft and chewy inside, and honestly it feels even crunchier and more satisfying 🤭

I had these with the pineapple Chi Sparkling Refresher and I honestly think this flavor might be my favorite 🍍 I love pineapple flavors in general, and this one is super fruity and refreshing without feeling too sweet or heavy. And of course I need my drink to be 0 sugar and 0 calories when I’m eating fried snacks like this 😭🤍

🌭 Mini Chewy Potato Corn Dogs

- Ingredients
1 medium potato (about 200g)
1/3 cup water
1/2 tsp salt
1/2 cup potato starch (or tapioca starch)
Mini sausages
Oil for frying

- For Serving
Your favorite sauce
(I paired mine with Buldak mayo 🤍)

Instructions

1.Make dough
Blend potato, water, and salt until smooth. Transfer to a pan and stir over low heat until the mixture becomes thick, stretchy, and chewy.

2.Add starch
Turn off the heat and mix in potato starch until fully combined.

3.Prep sausages
Place mini sausages onto skewers and cut a few small slits so they don’t burst while frying.

4.Shape
Transfer dough to a piping bag and swirl it around each sausage.

5.Fry
Deep fry until golden brown and crispy.

6.Serve
Serve warm with your favorite sauce 🤍

In the video, I made about 2x more dough so I could also make regular chewy potatoes alongside the mini corn dogs 🤭
Spicy tuna mayo rice pockets (onigiri style) 🍙🤍

The other day I was feeling kinda lazy to make anything complicated, but I had some leftover rice and canned tuna in the fridge so I decided to make these quick rice pockets for us 😭 And honestly… they were SO good.

I remember these being really trendy in Korea a few years ago and I always thought the folding idea was so smart. The cheese basically works like a little edible “sticker” to help seal everything together, kind of like how softened rice paper sticks when rolling kimbap.

I also just love how pretty it looks with the red gochujang rice peeking through the gim 🤭 It’s easy to hold, easy to eat, and perfect for a quick snack, picnic, or lazy meal.

In Korea, some people call these “jeogori kimbap” because the folded shape looks a little like a jeogori (저고리), which is the top part of Korean traditional clothing, hanbok. But the triangle shape also kind of reminds me of onigiri too 🍙

And honestly… the spicy gochujang rice, tuna mayo, cheese, gim, and lettuce combo just hits 😭

🍙 Spicy Tuna Mayo Rice Pocket (Onigiri Style)

makes 3

- Rice
1.5 cups cooked rice
2 Tsp gochujang
2 Tsp sesame oil
2 Tsp sesame seeds

- Filling
1 small can tuna (5.29 oz / 150g), drained
3 Tbsp mayo

- Other Ingredients
1.5 sheets gim (seaweed), cut diagonally into large triangles
Lettuce
Cheddar or American cheese slices, cut diagonally

Instructions

1.Make rice
Mix cooked rice with gochujang, sesame oil, and sesame seeds.

2.Make filling
Mix drained tuna with mayo.

3.Assemble
Place a triangle sheet of gim shiny side down. Add lettuce, then place gochujang rice on top and make a small dip in the center. Add tuna mayo filling.

4.Add cheese
Cut cheese slices diagonally and place one piece on each side corner of the gim.

5.Fold
Fold the bottom corner up over the rice first, then fold the two side corners inward so the cheese helps seal everything together into a triangle pocket.

6.Serve
Enjoy immediately 🤍
