Cock-a-Leekie Pie

Burns Night calls for proper Scottish comfort food – so here’s my Cock-a-Leekie Pie, made with @finnebroguefoods Naked Back Bacon.

Taking the classic flavours of a Cock-a-Leekie Soup: leek, chicken and prunes and slow cooking them to create this warming and delicious pie, topped with golden shortcrust pastry.

Serve with mash potato and veg. This is one deeply comforting dish that’s perfect for celebrating Burns Night at home.

Serves 4

Ingredients
200g pack of @finnebroguefoods Naked Unsmoked Bacon
1 leek, chopped
80g butter
1 tbsp flour
600g boneless chicken thighs
2 carrots, chopped
300ml chicken stock
10 leaves of tarragon
8 prunes
Salt and pepper
320g packet of ready rolled shortcrust pastry
1 egg

Method
Cut the bacon into bit-sized pieces and add to a pot over a medium heat along with the butter until they begin to colour, add the leek until the soften. Lower the heat, add the flour and stir together for about two minutes before adding your chicken stock a bit at a time to create a smooth sauce.
Chop your tarragon, slice your prunes in half and add them to the sauce, season with salt & pepper, before finally adding your carrots and chicken thighs.
This can sit, covered, on a low simmer for about 45 minutes to an hour. The sauce should be thick and the chicken soft.
Pre-heat the oven to 170°c fan.
If you have time, let the chicken mix cool to allow the flavours to enhance before placing into a casserole dish. Lay the shortcrust pastry on top of the pie filling and feel free to add some artistic flair!
Brush with eggwash and bake for 35-40 minutes or until the pastry is golden.
