Cheesecake Bars (Grandma Dircks’ Specialty) 

One of those old-school family recipes that never misses. Simple ingredients, ridiculously good results.

***USE A 13x9 (mine was too thick) I messed up 😎
Ingredients:

Bottom Layer:
• 1 box yellow cake mix
• 1 egg, beaten
• 1 stick margarine, melted & cooled

Top Layer:
• 1 lb powdered sugar
• 2 eggs, beaten
• 8 oz cream cheese, softened
• 1 tsp vanilla

Directions:

1. Preheat oven to 350°F.
2. Mix cake mix, egg, and melted margarine together.
3. Press mixture into a greased and floured 9x13 pan.
4. In another bowl, mix powdered sugar, eggs, cream cheese, and vanilla until smooth.
5. Pour over bottom layer and spread evenly.
6. Bake for 30–35 minutes until set and lightly golden.

Everything’s bigger in Texas… especially the beef 🥩

Had the opportunity to head down to Dallas with the crew at @allenbrotherssteaks and got a firsthand look at what makes their program so special. From walking the facility with Master Butcher @scotty_the_knife and hand-selecting steaks straight from the source… to throwing beef on the fire at @chefkentrathbun house… this trip was an absolute meat lover’s dream.

The highlight? Sitting down for the exclusive Wagyu Worldwide Dinner prepared by Chef @davidwalzog at Saint Ann Restaurant & Bar featuring some of the best Wagyu I’ve ever had in my life.

We wrapped it all up with a visit to @rosewoodranches to see their Domestic Wagyu program firsthand and gain a whole new appreciation for the work, care, and passion behind every steak.

From the ranch… to the butcher block… to the grill. An unreal experience with some even better people. Texas, we’ll be back. 🤠🔥

Bala Baiana (Brazilian Coconut Candy)

Crispy caramel shell with a creamy coconut center

Ingredients

* 1 (14 oz) can sweetened condensed milk
* 1 tablespoon butter
* 2/3 to 1 cup sweetened or unsweetened shredded coconut! Up to you 😂
* Pinch of salt

For the Caramel Shell

* 1 cup sugar
* 1/2 cup water
* 1 tablespoon white vinegar

Instructions

Make the Coconut Filling

1. In a saucepan over medium-low heat, combine:
 * sweetened condensed milk
 * butter
 * shredded coconut
 * pinch of salt
2. Stir constantly until thickened and pulling away from the pan like brigadeiro dough, about 10–15 minutes.
3. Transfer to a greased plate or parchment-lined tray and let cool completely.

Shape the Candies

1. Grease your hands lightly with butter.
2. Roll mixture into small balls or football-shaped candies.
3. Place on parchment paper.

For best results, chill them 20–30 minutes before coating.

Make the Caramel

1. In a clean saucepan combine:
 * sugar
 * water
 * vinegar
2. Do NOT stir once it begins boiling.
3. Cook until it reaches a deep golden amber color, about 300°F–310°F.

Coat the Bala Baiana

1. Using skewers or forks, dip each candy into the caramel.
2. Let excess drip off.
3. Place on parchment paper to harden.
