✨ RECIPE ~ homemade beef kofta, butter roasted toms, herby tahini yoghurt, bulgar wheat and parsley pickled onion salad πŸ…πŸ™ŒπŸ»
Just your average school lunch πŸ€ͺ one for the teenagers that would be great for your next dinner party or as a  special midweek supper. Make sure to  invest in good quality ingredients and get your hands on some flatbreads for mopping.
You will need for the 4
- 250g tomatoes 
- handful roasting herbs (thyme, rosemary and sage)
- 50g salted butter 
- 1 tbsp dried oregano 
- 3 tbsps brown sugar 
- 400g 15% fat beef mince 
- 1 small red onion, finely chopped plus half a red onion finely sliced 
- 30g flat leaf parsley leaves 
- red wine vinegar 
- 1 tsp cumin, 1 tsp sumac and 1 tsp coriander
- 2 crushed garlic cloves 
- tahini yoghurt: 30g chives, 30g basil, 30g parsley, 3 tbsps @belazu_co tahni, 1 tbsp honey, juice of 2 lemons, 1 garlic cloves and 250g thick Greek yoghurt 
- cooked pearl barley and toasted pine nuts to serve

1. Preheat oven to 200 degrees. Place tomatoes, roasting herbs, butter, oregano, brown sugar and seasoning in a lined tin. Mix together and then place in oven for 20-30 mins mixing often until softened and caramelised.
2. Place the beef mince, dried herbs, finely chopped onion, garlic and seasoning in a bowl and mix together with your hands so spice evenly distributed. Use your hands to split the mix into 20 patties. 
3. Place the tahini yog ingredients in a food processor, blitz till smooth and season to taste.
4. Place the remaining sliced red onion in a bowl with a glug of red wine vinegar, pinch of salt and tbsp sugar. Use the sqrunch method to pickle those onions. Once softened let for 10 mins before draining off excess vinegar and mixing with parsley in a bowl.
5. Fry the patties in batches in a little bit of butter for around 3 mins each side until golden brown!
6. Spread the herby tahni yog over the base of the plates and top with the bulgar wheat, Koftas, spoonful of those tomatoes and their juices and the parsley pickle salad.
7. Garnish with toasted pine nuts and serve straight away!

The perfect addition to your table this Sunday! Leaner than normal sausage rolls, with a richer more gamey taste, that work perfectly with the chutney. What’s best is you can find all the ingredients at @ocadozoom so you can be eating these in 90 minutes - get ordering and cooking.
Yoy will need for 12:
- 300g @marksandspencerfood venison mince 
- 200g 5% pork mince 
- 3 shallots, finely chopped 
- handful of chopped fresh sage 
- 2 tbsps @daylesfordfarm plum chutney, plus more to serve 
- 1 sheet @jus_rol puff pastry, cut in half lengthways 
- 1 egg, whisked 
- handful of white sesame seeds

1. Preheat your oven to 200 degrees and line a flat baking tray with greaseproof paper.
2. Place the venison and pork mine, chopped shallots, sage, seasoning and 2 tbsps of chutney in a bowl and mix together either your hands so evenly seasoned.
3. Half the meat and place down each piece of pastry evenly leaving space either side. Roll up and tuck the two ends together with your fingers and flip over. Brush with egg, sprinkle with seeds and place on the lined baking tray.
4. Place in the oven for around 25 minutes until puffed, golden brown and crisping on the edges. Serve warm alongside the plum chutney for dipping.

🍜 VENISON RAMEN RECIPE 🍜 
Just as lean as chicken breast but with all the umami richness you get from a πŸ₯© ~ venison is the lean protein you need to get more of in your diet. And it’s carbon neutral too with an abundance of deer in the UK that need eating. My favourite supplier is @curtispittsdeerservices but @ocadouk have some great @marksandspencerfood venison products now too.
You will need for 2: 
- 1 pack of the best quality instant chicken ramen noodles for 2 you can get ya hand on, cooked as per pack instructions 
- 2 eggs, soft boiled (I like @steweeggs rich yolks)
- 200g pre prepared stir fry veg 
- tbsp chopped garlic and ginger 
- soy sauce 
- 1 fillet of rump venison steak 
- your fav chilli oil (I love peanut rayu from @whitemausu ) , fresh coriander and sesame seeds to garnish

1. Start by frying the veg. Place a frying pan over a medium heat and drizzle with sesame oil. Once hot add the garlic and ginger and fry for a min till fragrant. Add the stir fry veg and 2 tbsps soy sauce and gently stir fry until the veg in softened but al dente - remove from heat.
2. Fry the venison steak until medium rare (around 3-4 mins each side depending on thickness), let rest for five mins and then thinly slice.
3. Split the noodles and broth between two bowls and top with the halved soft boiled eggs, stir fried venison and sliced blushing venison.
4. Garnish with chilli oil, coriander and sesame seeds and serve up eat hot!
