MUSHROOM AND TOFU NOODLE BOWL // Day 12 of 31 No Meat January! 🍜🌱

📝 INGREDIENTS
Serves 2: 
200g Mushrooms 
1tsp Garlic Paste
3cm Ginger 
1 Spring Onion

200g Firm Tofu
2tsp Cornflour 
2tsp Soy Sauce
2tbsp Oyster Sauce (I used LKK Vegan Oyster Sauce)

For the sauce:
2tbsp Soy Sauce
1tsp Sesame Oil
1tsp Gochujang
1tsp Maple Syrup
1tsp Rice Wine Vinegar
1/2tsp Tahini 
Water
2tbsp Sesame Seeds 
1 Spring Onion (to be added after) 

2 Nests Noodles (of choice) 
Sesame Seed (to garnish)
Spring Onion (to garnish)
Chilli Oil (optional)
 
👩🏽‍🍳 METHOD
1. In a bowl, make the sauce by mixing the ingredients listed above 
2. Finely cut the mushrooms and cook in sesame oil, add garlic and finely sliced ginger and spring onions, once cooked mix in approx 1tbsp of the sauce you just made, coat the mushrooms and remove from pan and set aside
3. In the same pan, add sesame oil and crumble in the tofu and coat with cornflour, when the tofu starts to brown, add some soy sauce and oyster sauce and keep cooking until brown and crispy 
4. In the meantime, cook noodles of choice according to packet instructions then once cooked, thoroughly coat with the sauce 
5. Add noodles to a bowl and top with any excess sauce, then add the mushrooms and crispy tofu on top 
6. Top with sesame seeds, spring onion and chilli oil
7. Serve and ENJOY!

15 MIN SMASHED HALLOUMI BREAKFAST TACO // Day 11 of 31 No Meat January! 🌱🧀🌮 

📝 INGREDIENTS
1 Mini Tortilla Wrap
50g Halloumi 
1/2 Avocado
Handful of Spinach (wilted)
4 Cherry Tomatoes
Pickled Onions
1 Red Chilli
Fresh Parsley
Salt
Pepper 

👩🏽‍🍳 METHOD
1. Grate the halloumi into a bowl, then sprinkle onto a hot pan and place a mini tortilla on top, press down and flip once the halloumi has browned and is crispy 
2. Remove from the pan and smash avocado on top, season with salt and pepper and then add wilted spinach, cherry tomatoes and 1 egg (cooked however you want to!) 
3. Season with pepper (and salt if you need it!), and finish off with red chilli and parsley
4. Serve and ENJOY!

CARAMELISED ONION PASTA // Day 10 of 31 No Meat January!🧅🍝🌱

📝 INGREDIENTS
3 White Onions 
1tsp Sugar
2tbsp Minced Garlic 
2tsp Garlic Granules
1tsp Smoked Paprika
1tsp Basil
1tsp Italian Seasoning
Salt to taste 
Pepper to taste 
1tbsp Soy Sauce
150g Sundried Tomatoes (and 1tbsp of it’s oil)
200ml Double Cream
Fresh Basil 
Parmesan
Mozzarella (grated or sliced)

Pasta of choice 

👩🏽‍🍳 METHOD
1. Heat olive oil and butter in a pan and add the onions, once softened mix in sugar and leave to brown until coolest soft and caramelised (this can take up to an hour depending on how soft and caramelised you want them!)
2. Once browned, mix in minced garlic, seasonings listed above and soy sauce 
3. Next add in chopped Sundried tomatoes and its oil and mix, then mix in the cream and simmer on low heat, sprinkle over some fresh basil
4. Cook the pasta of choice according to packet instructions and mix in ensuring it’s fully coated, add in some pasta water too 
5. Top with Parmesan and mozzarella and place in the oven to melt, for approx 5-7 minutes 
6. Serve and ENJOY!
