Grilled Cabbage Kabobs w/High Protein Ranch Dressing & Toasted Breadcrumbs! Full recipe below

High Protein Ranch Dressing Ingredients:
½  cup low-fat cottage cheese
¼  cup low-fat Greek yogurt
¼ cup low-fat sour cream
3 tbsp 2% milk
½  lemon juiced
½  tsp salt
½  tsp garlic powder
½  tsp onion powder
¼  tsp ground pepper
1 tbsp minced dill
1 tbsp minced parsley
1 tbsp minced chives

For the toasted breadcrumbs
⅓ cup panko breadcrumbs
2 tbsp dried parsley
3 tbsp grated parm
½ tsp kosher salt
2 tbsp olive oil

For the Cabbage
1 head of savoy cabbage
2 tbsp extra olive oil
6-8 skewers

Soak 6-8 skewers in water for an hour.

Make the dressing: Add cottage cheese, yogurt, sour cream, milk, lemon juice, salt, garlic powder, onion powder, and ground pepper to a blender. Blend until creamy and smooth. Mix in dill, parsley, and chives.

Toast the breadcrumbs. In a small bowl, mix the breadcrumbs, parsley, grated parm and salt. Add 2 tbsp olive oil to a pan and heat over medium-high. Once the oil is warm, add the breadcrumb mixture and toast, stirring occasionally until the breadcrumbs are golden brown. Remove from heat and transfer the toasted breadcrumbs to a heatproof bowl. 

Prep the cabbage. Preheat the grill to high. Cut the cabbage in half, remove the core, and then cut as shown. Run the skewers through the cabbage segments as shown. You should be able to make 6-8 skewers. 

Grilled the cabbage until slightly charred on all sides, about 1-2 minutes on each side. 

Top with the high protein Ranch dressing, toasted breadcrumbs and serve warm.

Dessert Pizza! Full recipe below!

Ingredients:
1, 12-ounce pizza dough
3 tbsp coconut oil, melted
⅓ cup @nutella 
2 tbsp pistachio cream (optional)
2 tbsp pistachio, chopped
5 large strawberries, sliced
2 tbsp powdered sugar

Place a pizza stone or your largest baking sheet face-down on the middle rack of the oven. Preheat the oven to 500°F. Let the stone or baking sheet preheat for at least 30 minutes before baking the pizza. It’s also helpful to let the pizza dough come to room temperature before using, so it’s relaxed and easy to stretch. 

Shape the pizza. Lightly dust the counter with flour. Place the dough on the counter and sprinkle the top with a little more flour. Using your fingers, press the dough outward, which will help form the crust. Once the pizza is about the size of both your hands, you can drape the dough over both sets of knuckles, making a fist, and pull and rotate to stretch the dough to your desired size. Aim to stretch the dough into a 12 inch circle. This pizza is meant to be thicker. 

Bake! Flour a pizza peel and place the dough on the peel, or use a piece of parchment paper to hold the stretched dough. 

Add toppings. Spread the coconut oil in the center of the pizza, leaving  an inch around for crust. Place the center of a spring foarm pan in the center. Bake for 10 to 15 minutes, until the crust is a deep golden brown.
Add Nutella, pistacchio cream (optional), strawberries, powder sugar.

Ingredients:
1 tbsp olive oil
2 cups leftover risotto
1, 4-ounce burrata, room temperature
Basil Oil (see recipe below)

Instructions:
-Add the olive oil to a medium-sized non-stick pan. 
-Add the leftover risotto and heat over medium-high heat. Cook, undisturbed, until the edges are a deep golden brown. 
-Remove from the heat and place the burrata in the center of the risotto. Flip onto your serving plate.
-Top with basil oil and enjoy!

Basil Oil
Ingredients:
2 cups basil, packed 
1 cup extra virgin olive oil
½ tsp kosher salt

Instructions:
-Fill a small bowl with ice and water, and bring a small pot of water to a boil. 
-Add the basil leaves to the boiling water for 10 seconds. Remove from boiling water and transfer the basil to the ice water. Let the basil sit in the ice bath for 15 seconds. This prevents the leaves from continuing to cook.
-Remove the basil from the ice bath and, using paper towels, gently squeeze the leaves to remove as much water as possible. 
-Add the basil, oil, and salt to a blender and blend. Strain the basil oil through cheesecloth or a fine mesh sieve. Store in an airtight container for up to 1 week.
