These bowls have seasoned beef with a nice crust, roasted sweet potatoes, peppers and onions, black beans, corn, and a creamy chipotle honey lime sauce over the top.

🛒 Ingredients:

Beef:
-2 lbs lean ground beef

Homemade Chipotle Taco Seasoning:
-equal parts garlic powder, onion powder, smoked paprika, and dried oregano
-1/2 part chipotle chili powder
-salt and pepper to taste

Potatoes:
-5 medium sweet potatoes, halved
-oil spray
-salt and pepper

Veggies:
-3 bell peppers, thinly sliced
-1 red onion, sliced
-oil spray
-salt and pepper

Beans + Corn:
-1 can black beans
-1 can yellow corn
-chipotle taco seasoning

Chipotle Honey Lime Sauce:
-1/2 cup Greek yogurt or mayo
-1 tbsp honey
-juice of 1 lime
-1/4 tsp chipotle powder
-1/4 tsp smoked paprika
-salt

📋 Instructions:
-roast sweet potatoes and peppers/onions at 400°F for about 30 minutes until tender and caramelized
-brown ground beef in a hot pan, press down for a crust, then season and break apart
-empty entire contents of canned black beans and corn into a pot and simmer with taco seasoning for 10 minutes
-mix together chipotle honey lime sauce ingredients
-build bowls with sweet potatoes, beef, peppers/onions, black beans, corn, and sauce

This is one of those simple meals that ends up saving me during busy weeks. High-protein, inexpensive, easy to make, and honestly really good for how little effort it takes.

🍴 Serving Size: 150g cooked rice, 300g beef + veggie mixture

⏲️ Cooking Time: 30 min

🛒 Ingredients:
-2 lbs lean ground beef

-2 cups shredded coleslaw veggies (cabbage, carrots, broccoli stems)

-1 tbsp minced garlic

-1 tbsp ginger paste

-1 tbsp @kindersflavors Korean BBQ seasoning 

-1 tbsp @forrealblends Amazin’ Asian seasoning

-1 1/2 cups uncooked white rice

-2 cups @kettleandfire bison bone broth

📋 Instructions:
-cook rice in bison bone broth for extra flavor and protein
-brown ground beef in a hot pan and break apart
-add garlic, ginger paste, and seasonings
-stir in shredded veggies and sauté until tender

-butterfly chicken breasts and season with Italian seasoning, salt, and pepper
-sear chicken in a hot pan with olive oil until golden with a nice crust, then remove and set aside
-in the same pan, sauté garlic and sun-dried tomatoes
-add tomato paste, dijon mustard, coconut milk, and Italian seasoning
-let simmer until thick, rich, and creamy before adding spinach, nutritional yeast, and lemon juice
-slice chicken and add back into the sauce
