This is my go to pizza recipe to get some big puffy crust energy. Whether baking in a standard or a pizza oven! It is a banger.

Ingredients
588g 00 flour
384g water
18g salt
1g dried yeast

Method

1️⃣ Mix water + yeast.
2️⃣ Add flour. Knead 5 mins.
3️⃣ Rest 10 mins.
4️⃣ Add salt. Knead 5 mins. Rest 10 mins.
(Should pass the windowpane test.)
5️⃣ Bulk ferment 5 hours at room temp.
6️⃣ Divide into 250g balls. Rest 4–5 hours.
7️⃣ Into the fridge for 24–48 hours.
8️⃣ Remove 2–3 hours before baking.

Stretch.
Top.
Bake hot (as hot as your oven will go).

Light crust.
Proper chew.
Serious flavour.
