Cereal Milk Ice Cream 🍨🥣

4 cups milk
1 cup heavy cream
3 cups cornflakes or any cereal
2/3 cup sugar
1/4 teaspoon fine sea salt
5 egg yolks

Toast the cereal in the oven at 300 degrees for 10 minutes, then pour warm milk over it and let steep for 20 minutes. Strain and heat the cereal milk with the heavy cream, half the sugar, and salt until steaming. In another bowl whisk the egg yolks with the remaining sugar, then slowly pour in the hot milk mixture while whisking. (This is called tempering the egg yolks) Return everything to the pot and cook on low, stirring constantly, until thickened enough to coat the back of a spoon. Strain and chill completely. (overnight if possible) Churn in an ice cream maker, ninja creami, etc. and freeze until scoopable. Cornflakes give you that nostalgic cereal milk flavor but you can do whatever!! Cinnamon Toast Crunch tastes almost like horchata, and Fruity Pebbles makes it extra sweet and colorful so have fun with it!

4 cups long-grain rice
2 red bell peppers
2 onions
2 scotch bonnet peppers/Habaneros
400g tomato paste
1 cup vegetable oil
1 tbsp ginger sliced
4 cloves garlic
4 cups chicken stock
Fine sea salt to taste
1 tsp smoked paprika
1 tsp dried thyme
1 tsp dried rosemary
1 tsp garlic powder
1 tsp onion powder
½ tsp ground cumin
½ tsp ground coriander
½ tsp black pepper
4 bay leaves
2 tbsp butter

Air fry or oven roast peppers, onions, garlic, and ginger at 350 Fahrenheit for about 20 minutes, then blend smooth. Heat oil in a pot, sauté sliced onions until soft, then add tomato paste and cook it down on low until deep red and rich. Stir in the blended pepper mix, seasonings, stock, water and bay leaves, then cover and let it simmer for about 10 minutes. Add washed rice, stir gently, cover tightly, and cook on low, stirring once midway, until rice is tender and liquid is absorbed. Add butter, cover, and let it steam on low for 5 more minutes and enjoy!
