Absolutely feel free to skip the pasta making and go for a packet option, spaghetti or fusilli are great with this pesto.

Serve 4 // Prep time 30 minutes
 
For the pasta
500 gr of semola rimacinata
300 ml of water
1 tbsp of extra virgin olive oil
1 pinch of salt
 
For the pesto
100 gr of sun dried cherry tomatoes @polliuk_ 
20 gr of capers in vinegar Polli
40 gr of basil / fennel tops / parsley
1 garlic clove
30 gr of grated cheese
40 ml of extra virgin olive oil
Salt to taste
 
For the pangrattato
20 gr of sun dried cherry tomatoes Polli
10 gr of capers in vinegar Polli
1 garlic clove
150/200 gr of coarse bread crumbs
2 tbsp of extra virgin olive oil
Salt to taste
 
Method

For the pesto simply place all the ingredients into a food processor and blitz until you have a grainy paste. Set aside.
 
To make the toasted pangrattato simply fry the chopped garlic in oil and add the chopped tomatoes and capers. Fry for 2 minutes and stir in the breadcrumbs. Season with a pinch of salt and cook on medium heat while stirring until lightly browned. Set aside.
 
To bring the dish together, cook the cavatelli in salted boiling water for about 5 minutes than drain into a bowl. Let it cool down for 60 seconds and add a few spoons of pesto along with a ladle of (no longer boiling) pasta water. Mix well until nice and creamy and plate straight away. Sprinkle with the toasted pangrattato, garnish with a few basil leaves and serve straight away.
