* 2–3 large bunches black seedless grapes
* 2 cups fresh lemon juice
* 1/2 cup sugar (adjust depending on how sweet your grapes are)
* 2–3 litres cold water

Method

1. Rinse the grapes and lemons under cold running water. Remove the grapes from the stems.
2. Add the grapes to a food processor (or you can use a blender if you want) and pulse until broken down and juicy, but not completely smooth.
3. Pour the grapes into a large pot and stir in the sugar.
4. Bring the mixture to a gentle boil for a few minutes, stirring occasionally. (This helps you melt the sugar evenly get that beautiful colour and kills off bacteria, which extends the shelf life.)
5. Add the lemon juice and water, then mix well. (Depending on how much juice your grapes release, you may need a little more or less water.)
6. Strain everything through a fine mesh strainer or cheesecloth, pressing well to extract all the juice while leaving behind the skins and pulp.
7. Transfer to the fridge and chill for at least 4–6 hours, preferably overnight.
8. Serve over ice with fresh mint and lemon slices if desired.

Pan roasted Salmon, Cherry tomato sauce, Spaghettini 

Ingredients:

* 3 salmon fillets
* Salt
* Black pepper
* Cajun seasoning
* 2 pints cherry tomatoes
* 2 cloves garlic (crushed)
* 1 tsp chili flakes
* 1 tsp salt
* ½ pack spaghettini
* Basil
* Parmigiano-Reggiano
* Olive oil

Method:

1. Season salmon with salt, black pepper, and Cajun seasoning. Heat oil in a pan over medium-high heat. Sear on both sides until deeply golden and cooked to your liking. Remove from the pan and let rest.
2. In the same pan, reduce heat to medium. Add cherry tomatoes and sauté until blistered. Add garlic and chili flakes. Use a masher or a fork to lightly crush the tomatoes into a sauce.
3. Add 1 tsp salt and black pepper. Let simmer until slightly thickened.
4. Cook spaghettini until al dente. Add directly into the sauce and toss.
5. Add basil and Parmigiano-Reggiano. Toss until glossy and emulsified. Taste and adjust seasoning.
6. Plate the spaghettini. Top with salmon. Finish with basil and Parmigiano-Reggiano.

🔥 S’mores Chocolate Chip Cookie Slab

A thick, gooey chocolate chip cookie baked over a graham cracker base and finished with toasted marshmallows and chunks of  dark chocolate.

Ingredients

* 1½ cups salted butter, softened
* 1½ cups granulated sugar
* 1½ cups packed light brown sugar
* 3 teaspoons vanilla extract
* 3 large eggs
* 4½ cups all-purpose flour
* 1½ teaspoons baking soda
* ¾ teaspoon baking powder
* 1½ teaspoons sea salt
* 3 cups chocolate chips

For the base & topping

* Graham crackers (enough to fully line the bottom of your dish)
* 12–15 large marshmallows
* 1 bar Lindt dark chocolate, roughly chopped

Method

Preheat your oven to 375°F (190°C) and lightly grease a 9x12 or 9x13-inch Pyrex baking dish.

Line the bottom of the dish with graham crackers, breaking them as needed so the base is fully covered in an even layer.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, baking powder, and sea salt. Gradually add the dry ingredients to the wet mixture, mixing just until a dough forms. Fold in the chocolate chips.

Scoop the cookie dough over the graham cracker base and spread it evenly to the edges.

Top the dough with chopped dark chocolate and scatter the marshmallows evenly over the surface.

Bake for 20–30 minutes, until the edges are golden and set, the center is still soft, and the marshmallows are melted and lightly toasted.

Let cool for at least 15–20 minutes before slicing to allow everything to set while staying gooey inside.
