Summer needs scones 🍓😍 RECIPE BELOW 👇🏻

Norah and I had great fun making scones last weekend, I need to make another batch immediately 😂

250g self-raising flour (to make GF use GF flour & add 1 tsp xanthan gum)

1 tsp baking powder

50g caster sugar

40g cold butter, cubed

75ml whole milk

1 medium egg

1 medium egg, beaten for brushing tops

Sugar for sprinkling over the tops

In a large bowl, mix the flour, xanthan gum, baking

powder and sugar. Rub in the butter with your

fingertips until you have fine breadcrumbs.

In a jug whisk together the milk and 1 egg. Gradually

mix this into the flour and bring together and knead

lightly until you have a smooth dough.

Roll out the scones until 2.5cm thick and cut out

using a 5cm cutter.

Place onto a lined baking tray

and place in the freezer for 30 minutes to firm up.

Brush the beaten egg over the top and a sprinkle over sugar and when ready to bake, bake at 200°C in a preheated oven for 12-15 minutes until golden brown.

To make your own:

225g plain flour

150g butter

75g caster sugar

pink food colouring

green food colouring

- Place the flour, butter and sugar in a bowl. Rub the butter into the dry ingredients until a dough forms. This can take a few minutes. Break off 1/3 of the dough.

- Tint the 2/3 with pink food colouring and the final 1/3 with green food colouring. Place the dough in the freezer for 10 minutes.

- Roll the dough 0.5cm thick and cut hearts out if the pink dough and stars out of the green dough, ensuring you have the same number of each.

- Cut into the top of the heart with the star cutter and then add the green star into the heart to create the strawberry shape.

- Use the end of the spoon to create dots all over the strawberry and then place on a lined baking tray. Pop into the freezer for at least an hour.

- Preheat the oven to 190°c and bake for 8-10 minutes. Leave to cool on the tray before enjoying 🍓

You don't need a fancy platter over here. Cover with a tea towel and load with things to dip into the chocolate 👌🏻 This makes the most perfect BBQ dessert.

Ingredients

50g cocoa powder
6 tbsp boiling water
100g butter, softened
275g caster sugar
3 large eggs
125 ml milk
175 g self-raising flour (if using GF add ¾ tsp xanthan gum)
1 tsp baking powder
Milk chocolate spread, warmed slightly until spreadable
Milk & white chocolate buttons (ASDA or Aldi sell small ones)

Preheat the oven to 175°C. Grease and line a 12-inch
(30-cm) baking pan.

To a large bowl, add the cocoa powder and boiling
water. Mix until smooth. Using an electric whisk or
stand mixer, add the butter and beat it into the
cocoa until smooth.

Add the sugar, eggs, milk, flour
and baking powder. Mix until smooth and
combined.

Pour the mixture into the pan, and spread it evenly.
Bake for 30 to 35 minutes, or until a skewer inserted
into the centre comes out clean. Leave it to cool
completely at room temperature in the pan

Once cool spread over the chocolate spread and add the chocolate buttons on top to make flowers. Pop in the fridge until set.
