I’m not a food safety professional so do your research, but here’s what I found. The FDA requires fish served raw to be frozen at -4°F for 7 days to kill parasites — this applies mainly to wild-caught salmon (sockeye, king, coho) which are exposed to infected prey in the wild.

Farm-raised Atlantic salmon (what Costco sells) is safer because they’re raised on controlled feed with no wild prey, making parasite risk extremely low. It’s why most sushi restaurants in the US use farmed Atlantic.

That said, raw fish still carries bacterial risks like any raw protein — same category as runny eggs or rare steak. Buy from a reputable source, keep it cold, and use good judgment.
