#AD | Cannellini Bean Cassoulet with Salmon and a Wild Rocket Salad

Made with the new @muttipomodorouk double concentrated tomato puree with garlic that’s made from 100% Italian tomatoes. It builds body and flavour with ease in this dish without compromising on quality.

Ingredients:
Olive oil
Sausages - 3 (meat removed from skin)
Salt
Black pepper
Fennel seeds - ½ tsp
Mutti double concentrate tomato puree with garlic - 2 tbsp
Cannellini beans - 600g
Salmon fillets - 2 (approx. 125g each)
Oil (high smoke point like avocado, ground nut oil, sunflower oil etc.)
Rocket - 60g
Lemon - ½

Add olive oil to a medium sauté pan on medium-high heat. Once the oil is hot add in the sausage meat. Break it up with a spoon and cook until it starts to brown.
Add in fennel seeds, season with salt and a few cracks of black pepper. Mix well then cook for another couple of minutes.
Add Mutti double concentrated tomato puree with garlic and mix well. Cook for 3-5 minutes until the colour starts to turn from bright red to a deeper orange.
Add in the cannellini beans, juice and all. If it seems too thick, add in some water too (you’re looking for a stew-like consistency). Stir then simmer on medium heat while you cook the salmon.
Pat the salmon dry all over and season all over with salt.
Place a frying pan on medium-high heat. Once hot, add a couple of tablespoons of oil then lay the salmon fillets skin-side down.
After 5 minutes, once the skin is nice and crispy, flip the fillets and cook on the other side for a couple of minutes. Colour the remaining two sides then remove from the pan.
To make the rocket salad, combine a couple of tablespoons of olive oil, the juice of half a lemon, a pinch of salt and some cracks of black pepper in a bowl. Mix well then add in the rocket and toss it through.
Serve the bean cassoulet, topped with salmon and a bunch of rocket salad.
