Turns out smoked pork makes for some pretty dang good comfort food, too 🤌🏻

Here’s how I made this smoked pork over three cheese grits with homemade salsa verde 🔥

Ingredients for the Pork Butt:
• 1 (3-5 lb.) boneless pork butt
• 1:1 coarse salt & pepper mix (or Mexican-style seasoning)
• 1 (12 oz.) Coca-Cola

Ingredients for the Grits:
• 1½ C dry grits
• 4 C chicken stock
• 1 C heavy cream
• ¼ C cheddar cheese, grated
• ¼ C gouda cheese, grated
• ¼ C parmesan cheese, grated
• 2 T butter
• Salt, to taste

Ingredients for the Salsa Verde:
• 2 lbs. tomatillos, halved
• 1 white onion, halved
• 2 jalapeños
• 1 small head garlic
• 1 bunch cilantro
• 1 lime, juiced
• Salt, to taste
• Water, as needed

Directions:

1. Char the tomatillos, onion, jalapeños, and garlic over medium-high heat until softened. Blend with cilantro, lime juice, salt, and a splash of water until smooth.
2. Bring stock and cream to a boil. Reduce heat, slowly whisk in grits, and cook until creamy (~25 minutes). Stir in butter and cheeses; season to taste.
3. Cut pork butt into 4-6 chunks, season liberally, and smoke at 275°F until bark develops (~180°F internal).
4. Place pork in a covered pan with the Coke and continue cooking until probe tender (205-210°F).
5. Plate the grits, top with a chunk of pork, spoon over the salsa verde, and enjoy!

Ingredients:

Bread of choice
4 Tbsp butter, softened
2 cups pulled pork
8 slices sharp cheddar cheese
8 slices pepper jack cheese
½ cup BBQ sauce
1 cup crispy fried onions

Instructions:

1. Butter one side of each slice of Texas Toast.
2. Build the sandwiches with cheddar, pulled pork, BBQ sauce, crispy fried onions, pepper jack, and a second slice of bread (buttered side out).
3. Place on a preheated griddle over medium-low heat.
4. Cook 3–4 minutes per side until golden brown and crispy, pressing lightly as it cooks.
5. Remove when the cheese is fully melted, slice in half, and serve immediately.

This is not your mom’s beef stroganoff 🥩🍝

I couple jot stand this as a kid, but making it from scratch has completely changed my mind on this recipe. Here’s how I make it:

Ingredients:
- 2 tbsp butter
- 2 lbs 80/20 ground beef
- 1 sweet onion, finely diced
- 8 oz baby bella mushrooms, finely chopped
- 4 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 ½ tsp black pepper
- 2 tsp salt, plus more to taste
- 1 tbsp Worcestershire sauce
- 1 tsp Better Than Bouillon beef base (optional)
- 12 oz egg noodles
- 3 cups beef broth
- 1 cup whole milk
- 4 oz cream cheese, softened
- ¾ cup sour cream
- ½ tsp MSG (optional, for extra nostalgia)
- Fresh parsley, chopped (for garnish)

Instructions

1. Brown the Mushrooms & Aromatics:
- In a Dutch oven or large deep skillet over medium-high heat, melt butter and add onions and mushrooms.
- Cook for 6-8 minutes, stirring occasionally, until mushrooms release their moisture and begin to brown.
- Add garlic and cook for 30 seconds until fragrant.

2. Brown the Beef:
- Add ground beef directly into the pot and break it apart as it cooks.
- Season with garlic powder, onion powder, black pepper, salt, and optional MSG.
- Cook for 5-7 minutes until browned.
- Stir in Worcestershire sauce and Better Than Bouillon.

3. Cook Pasta & Simmer:
- Add egg noodles, beef broth, and milk, stirring to combine.
- Bring mixture to a boil, then reduce to a simmer.
- Cover and cook for 8-10 minutes, stirring occasionally, until noodles are tender and most of the liquid has reduced.

4. Make It Creamy:
- Reduce heat to low and stir in cream cheese until smooth and fully melted.
- Turn heat off completely, then fold in sour cream until creamy and combined.
- Taste and adjust seasoning if needed.

5. Final Touches & Serve:
- Spoon into bowls and garnish with fresh parsley and extra black pepper.
- Serve immediately.
