🍆 Son-of-Sabich burger 🍔 this is one Jew-ish dish you don’t wanna miss.

(PS the cheese was vegan)

To make:

Burger
300g beef mince (20% fat)
Salt and black pepper
2–3 soft burger buns
1 large aubergine, sliced into rounds
Neutral oil, for frying
2–3 eggs
Optional: cheese slices (I used vegan cheese so it’s kosher)
Pickled cucumbers

Tahini–Amba sauce (burger base)
4 tbsp tahini
Juice of ½ lemon
1 small garlic clove, grated
Cold water, to loosen
Salt
1 tbsp amba (store-bought)
Aleppo pepper (optional)

Israeli salad
• Tomato, cucumber, parsley
• Finely chopped
• Salt + lemon + olive oil

Method

Cut and salt the aubergine (eggplant).
Let it sit 10 minutes, then pat dry.
Fry in neutral oil until golden and soft inside. Set aside.

Mix tahini, lemon, garlic, salt and enough cold water to make it spoonable.
Stir through the amba. Add Aleppo pepper if using.

Chop and mix the Israeli salad. Keep fresh and cold.

Roll beef into loose balls. (Use vegan if desired) 
Heat pan until smoking hot.
Add oil, smash hard, season.
Cook 2 minutes until crisp, flip, add vegan cheese if using, cook 30–60 seconds.

Fry eggs sunny-side or over-easy.

Toast buns lightly.

Build
Bottom bun → tahini-amba → smash patty → aubergine → fried egg → pickles → salad → more sauce → top bun

🐟 watermelon tuna 🍣 still blows my mind to this day…

This is really one of those plant-based recipes you can make easily at home and will shock you. Yes watermelon might not be in season everywhere, but save this and make it another day 

Oh and yes, WAS is past tense so yes, as he said in 184626 times I’m no longer plant-based

To make, you need: 

1 watermelon 

3tbsp soy sauce 
1tbsp rice wine vinegar 
1tbsp sesame oil 
1tsp minced ginger 
1tsp mince garlic 
1 sheet of nori, cut up 

To serve: 
Rice 
Sesame oil
Sesame seeds 
Green onion 

-cut your watermelon up into steak sized chunks 
-make your marinade in a large dish 
-add the watermelon to the marinade and leave to marinate, the longer the better but I recommend at least an hour 
-put it in the oven at 180c and cook for 40mins to an hour, turning the steaks halfway
-once cooked, sear using a cast iron pan or on the BBQ if you fancy 
-serve over sushi rice with sesame oil, sesame seeds and green onion
