Form a dough ball and separate into small sections of cookie dough to form into cake pop bites. Set aside on parchment lined baking sheet in fridge until firm. In a small microwave-safe bowl, microwave white chocolate and coconut oil for 30-second increments, stirring each time until melted with a glossy consistency. Add a few drops of food coloring and mix until light pink color is achieved. Once cake pops are firm, dip in pink white chocolate mixture. Top with more rainbow sprinkles and set in fridge until chocolate coating has hardened.
