one of those dinners that’s easy, really filling, and everyone actually eats it (which is saying a lot in this house 🙃)

I’ve realised I feel so much better when my meals are properly balanced - protein, carbs, all of it - and this one just ticks every box without feeling complicated

recipe below if you want to try it ⬇️ 

Ingredients:
2 tbsp olive oil
1kg chicken thighs (boneless skinless, chopped into pieces)
2 onions (chopped)
4 cloves garlic (minced)
2 carrots (chopped)
2 celery sticks (chopped)
2 tsp ginger
2 tsp coriander
2 tsp cumin
1/2 tsp cinnamon
300ml chicken stock
1 400g tin tomatoes
300g butternut squash (cubed)
1 tbsp honey
juice of 1 lemon
salt and pepper to taste

Method:
Heat up 1/2 the olive oil and cook chicken. Add salt & pepper. Remove from the pan.

Heat up the remaining olive oil and fry onions and garlic until golden. Add carrots, celery and spices. Cook until soft.

Add stock, tomatoes & chicken. Bring to the boil then simmer for 30-40 mins. Add butternut squash halfway through.

Once thickened, stir in honey & lemon juice. Season to taste and serve with couscous.

I completely incinerated my onions 🧅🙈😂 But they still tasted amazing! 😋 My favourite high protein lentil bolognese 🍝 It’s vegan, full of fibre, easy to make and tastes  delicious! Full list of ingredients & recipe below ⬇️ 

1 1/2 tbsp olive oil 
1 onion, chopped 
4 cloves garlic, finely chopped 
1 tsp oregano
1 tsp thyme 
Salt & pepper 
1 tube tomato paste 
1/2 cup red wine 
1 tin chopped tomatoes 
750ml vegetable stock 
1 cup red lentils, soaked
1/4 cup walnuts, chopped 
1 tbsp balsamic vinegar 
Fresh parsley 
Pappardelle 

Method: Soak the lentils for 30 mins. Heat olive oil in a large saucepan & add onions. Brown them & add garlic, oregano, thyme, salt & pepper. Add tube of tomato paste & red wine to deglaze the pan. When the mixture looks jammy, add in veggie stock, lentils & walnuts. Bring to the boil, the simmer and cook for 20 mins. Add tin of tomatoes, balsamic vinegar & parsley. Check seasoning z& cook for another 20 mins. Meanwhile, cook pasta in boiling salted water. Enjoy! 🥰 #highproteinmeals #veganrecipe #lentilbolognese #highproteinvegan #veganfood
