My father never cooked for perfection. He cooked for flavour. These rustic flatbreads, or pancakes, or wraps, whatever you like, are a little messy, a little uneven, and 100 percent full of heart.
Here is to quick, easy, real food and to embracing the beautiful mess.

Flatbreads or Not Flatbreads 

Ingredients

190g gram flour

150g rice flour

50g potato starch

150g grated paneer

150g frozen garden peas, rinsed quickly under hot water to thaw

1 tbsp ghee or oil

1 tsp crushed fennel seeds

2 tsp ground coriander

1 tsp ground cumin

Chilli powder to taste

½ tsp turmeric powder

2 tbsp tomato paste

Green chilli paste to taste

2 tsp ginger paste

Sea salt to taste

Large handful of chopped fresh coriander

Juice and zest of 1 small lemon

250ml hot water from the kettle 

Step by Step Method

Mix dry ingredients first
In a large bowl, add gram flour, rice flour, potato starch, crushed fennel seeds, ground coriander, ground cumin, turmeric, chilli powder, and sea salt. Stir lightly.

Add the flavour bomb
Toss in grated paneer, peas, chopped coriander, tomato paste, green chilli paste, ginger paste, lemon juice, and zest. Mix everything together.

Make the batter
Slowly pour in the 250ml of hot water while stirring. You want a thick pancake like batter slightly thicker than normal pancake batter. 

Rest a bit
Let the batter sit for 15 minutes. This helps it hold together and cook evenly.

Cook your flatbreads
Heat a tava, skillet, or non-stick pan on low heat. Brush lightly with oil.
Pour a ladle of batter onto the pan. Spread gently with the back of the ladle. It does not need to be perfect.
Cook for 1 to 2 minutes until the edges start to dry and the bottom is golden.
Flip carefully and cook the other side for another 1 to 2 minutes. Brush a little ghee or oil on top while cooking.

Repeat
Keep going until all the batter is used.

Serve
You will get about 8 small flatbreads or 4 large ones. Rustic, slightly cracked, and full of flavour. Eat them warm.

Easy-Peasy Red Lentil & Carrot Chilla with Mange Tout, Red Onion & Cabbage
Servings: 8
Ingredients
480 g red lentils (masoor dal, soaked 3–4 hours)
½ large red onion, finely chopped
150 g carrot, grated
50 g white cabbage, grated
50 g mange tout, chopped
1 large tomato, skin removed and chopped
60 g low-fat halloumi
15 g ginger, grated
1 tsp turmeric powder
1 tsp ground coriander
1 tsp smoked sweet paprika
1 tsp cumin seeds
¾ tsp black pepper
2tbs Greek yogurt 
Salt to taste (be careful — even low-fat halloumi has a lot of salt)
250 ml water (for blending)
Juice of 1 small lime
Good olive oil for brushing
Optional: 1 fresh red chili, finely chopped
Method
Blend Lentils
Blend the soaked red lentils with 250 ml water until smooth and slightly thick.
Mix Everything
In a large bowl, combine the blended lentils with all remaining ingredients: onion, carrot, cabbage, mange tout, tomato, halloumi, spices, lime juice, yogurt and optional chili. Mix well.
Cook Chillas
Preheat a non-stick pan on medium heat and lightly brush with olive oil.
Pour one ladle (100–120 g) per chilla and spread gently into a circle.
Cover with a lid and cook for 2 minutes.
Remove the lid and cook for another 2 minutes or until golden and crispy.
Repeat with the remaining batter.
💡 Pro Tip: Preheat the pan on medium heat for even cooking. After flipping, press gently with a spatula for a few seconds to help the chilla brown evenly. Serve immediately for the best crispy texture.
