We’re a Mediterranean house (I’m Cypriot, he’s Maltese) so we know good food.

On our first trip to Malta together, we had a ftira somewhere different every day for lunch and ranked them accordingly.

This is the product of all my favourites together.

And it’s too good to gatekeep.

The “ftira” is actually the bread itself but I don’t make bread so I’ve gone for a bagel (ciabatta works beautifully). Start with a layer of tomato puree directly on the bread, followed by your EVOO. Then add tomato, cottage cheese, red onion, a mix of tuna, capers, green olives, and butter beans. Topped with @maldonsalt for health, lemon zest for razzle dazzle 👐🏻

Nothing feels more like a holiday to me than this. 🐟

A 4-hour slow-braised brisket deserves to be paired with only restaurant-quality @lambwestonathomeukie waffle fries. 🍟

They’re already seasoned, done in a jiffy in the air fryer, and go so well with any dish because they’re not your standard frozen chips. Exclusively available at @morrisons 🛒

For my brisket, I started with a mustard binder, and went in with my @fireflybbq black charcoal rub. Popped that into my @lecreusetuk 30cm shallow casserole with 500ml @oxo_uk beef stock, and cooked at 150° for around 4 hours.

Added cheese to the waffle fries, drizzled Firefly’s raspberry chipotle bbq sauce over the brisket, and finished with chives.
